■ Beyond the Girl in the Mirror

There was a time when I couldn’t truly see myself. I could look in the mirror, but what I
saw was someone I couldn’t describe — someone hidden behind defenses, pain, and
years of struggle.
My journey has been long and complicated. I went from weighing 260 pounds to 120,
and every pound lost carried a story — of hope, frustration, victory, and setbacks.
Along the way, I faced health issues that came not just from the weight itself, but
from the stress, treatments, and changes my body went through. Some of those
health challenges brought new ones, making everyday life a bit harder than it used to
be.
But here’s what I’ve learned: every challenge taught me something about strength.
Every obstacle reminded me that healing isn’t always about how you look, but about
how you see yourself.
Today, when I look in the mirror, I don’t see the “girl” I used to hide from. I see a
woman who fought for herself — who faced pain, health battles, and self-doubt,
and still found her way back to being real.
It’s not a perfect story, but it’s mine. And every morning, when I see my reflection now,
I finally see a person — someone who’s lived, grown, and learned to love who she is.

Visualize yourself there: It’s fine to imagine furniture placement or lifestyle fit.
Peek inside storage areas (closets, pantries, cabinets) — these help you understand space, as long as you’re gentle and respectful.
Take notes or photos if the seller has given permission (ask your agent first).
Be mindful: Remove shoes or wear provided shoe covers if requested.

Your Debt-to-Income Ratio (DTI) helps lenders see how much of your income goes toward paying debts. It’s one of the main numbers used to decide how much home you can afford.
💡 What Is It?
Your DTI compares your monthly debt payments to your gross monthly income (your income before taxes).
Formula:
👉 DTI = (Total Monthly Debt Payments ÷ Gross Monthly Income) × 100
📊 Example:
Gross Monthly Income: $6,000
Monthly Debts (car, credit cards, student loans, mortgage): $2,100

8 pounds Pork Shoulder

10 Garlic Cloves
•
6 tablespoons Sofrito
•
2 packets Goya Sazon
•
0.25 cup Adobo Seasoning

Instructions
Stab the pork shoulder in various places and insert the garlic pieces. Combine the adobo and sazon and use as a dry rub and coat pork shoulder. Rub the sofrito all around the pork shoulder. See the notes for preparing the skin.
Cover with plastic wrap and set in your refrigerator overnight.
Preheat your oven to 300° F. Remove the plastic from pork shoulder and place in a roaster pan.
Cook covered for about 5 hours. You can add 1/2 to 1 cup of water to the roaster to add some additional juices for later. The internal temperature should reach 205°F. The meat will be fall apart tender when it is done.
If you left the skin on, place the roast skin side up, pat the skin dry and turn up the oven temperature to 500°F. Roast uncovered until the skin is crispy on top to your liking. For extra crunchy skin use your broiler but keep an eye on it to be sure it does not burn.
Remove from oven, let it rest for 15 minutes and place half the shoulder on a large cutting board. Remove the skin and set aside. Discard the layer of fat.
Start chopping the meat with a sharp knife and place chopped pieces in a large bowl.
Take remaining juices from the cooking process and place in a container in the refrigerator to allow the fat to rise to the top and solidify. Remove solid fat and discard. If you have a gravy and fat separator, those work very well. Mix the juice with your chopped meat.
Portion off into individual containers and freeze. This will keep frozen for several months if you vacuum pack the frozen blocks from the containers
